The olive is a small oval or oblong fruit. It is grown chiefly for its oil which is used in cooking. As the fruit matures it turns from green to yellow to red to purple-black. It has a smooth skin. It has a hard stone like seed. Its flesh surrounds a hard pit. Both the flesh and the seed in the pit contain oil, which makes up 10 to 40 percent of the weight of the fruit. The fruit has a bitter taste.
